Vegan fruit cookies

These are my first vegan cookies I've ever made. They turned out pretty delicious, even if they don't look too nice... :P


Ingredients:

100g vegetable butter
100g raw sugar (or simple one if you don't have raw one)
1 tablespoon chia seeds
vanilla (if you'd like)
200g (wholemeal) flour
1 tea spoon baking powder
some fruits 
water

How to:


Put the chia seeds in a little bowl and add some water (not too much), leave it for about 10 minutes and it will become a jelly.

Mix butter and sugar in a bowl until it gets creamy, add the chia jelly and keep on stiring.
Mix flour and baking powder in a separate bowl and add it then to the butter mixture, add also all the other ingredients exept the fruits mix it well to a pastry. It might be a little liquid, but that's okay!
Last add the fruits which you cutted into very small pieces and mix them well under the pastry. I used for mine strawberries :)

Preheat the oven on high temperature.

To form cookies use a tablespoon. Just take a spoon full of the mixture and make blots on a baking sheet.
Turn down the heat of the oven to max. 200 degrees celsius, bake the cookies for about 12 minutes (maybe a little more, it depends on the heat of the oven and size of the cookies).
Ready!
