Vegetable pan

Ingredients:

(for 2 portions)

1 eggplant
250g mushrooms (champignons)
1/2 can of peeled and cutted tomatos for lazy ones, or some fresh tomatos...
1 spring onion
spices of your taste

How to:


Prepare the eggplant like for the Zacusca recipe.
Then cut the onion into small pieces and put into a pan and fry it a little 8I never use oil), add some water. In the meantime cut the eggplant to cubes and add it to the onion. While these are on the fire, wash the mushrooms and cut them to small pieces if necessary and add them to the eggplants.  Last you add the tomatos, stear everything well around and flavour it with some spices (I used basil, chili powder, curry). Ready! 

Remember, never keep mushrooms too long on fire, the max. is 3 minutes!!
