raw vegan "pasta"

Okay, this might sound weird for some of you, but believe me, it tastes delicious ;)
I'm talking about raw vegan pasta! I'm sure, you've heard aobut it... The most common way to make it, is from zucchini or cucumber, but you can also use carrots... I choosed cucumbers, since I had one in the fridge ;) And then I added some fruits as a replacement of sauce!
So, here comes the recipe:


Ingredients:


1/2 cucumber
1/2 orange
1/2 pear
Of course you can use more, this makes a small portion ;)


How to:


You cut the cucumber in slices using a peeler (it goes pretty easy if cut it first in half) and you add some of the cutted fruits on top. That's it, it's that easy!!
If you like you can add some hearbs or spices...

Okay, das mag für einige von euch seltsam klingen, aber glaubt mir, es ist echt lecker!!! ;) Es geht um rohe vegane Pasta! Ihr habt bestimmt davon gehört... Die bekannteste Variante wird aus Zucchini oder Gurke gemacht, man kann aber auch Karotten nehmen... Ich habe eine Gurke gewählt, weil ich gerade eine im Kühlschrank hatte ;) Dann habe ich anstelle einer Sauce, Früchte darüber gegeben!
Aslo, hier kommt das Rezept:


Zutaten:


1/2 Gurke
1/2 Orange
1/2 Birne
Ihr könnt natürlich mehr nehmen, das sind Angaben für eine kleine Portion! ;)


Zubereitung:


Ihr halbiert die Gurke am besten und schneidet sie dann mit dem Sparschäler in dünne Streifen. Dann kommt das Obst, in Stücke geschnitten, darüber. Fertig! So einfach gehts! 
Wenn ihr mögt könnt ihr noch frische Kräuter oder Gewürze dazugeben...

vegan lychee banana cake

This cake my friend Fiona made! It was really delicious, so I asked her for the recipe. She found it on gormandizewithus
So here it is:


Ingredients:

1 cup very ripe mashed banana
1/2 cup canola oil (or other)
1 cup lychee juice (from the lychees you just shelled ideally - or from the can if you bought it in natural juice or a bottle if you can find unsweetened lychee juice)
1/2 cup unsweetened oat or soy milk
1 cup drained lychee flesh, roughly chopped
2 1/2 cups plain wholemeal flour
2 tsp baking powder
1/2 tsp bicarb soda
1/2 tsp salt

1 can coconut cream, left in the fridge overnight (or longer)
1 tsp rum extract (or actual rum, if you prefer)

Baking:


about 1 hour (or until a skewer inserted in the middle comes out clean) at the on 180 degrees celsius preheated oven


Baking form:


medium size cake tin or sprinform, covered with a baking paper and greased

How to:

Whisk together the banana, canola oil, lychee juice and oat milk. Stir the lychee flesh through.
Sift in the flour, baking powder, bicarb soda and salt and mix well. Now put the cake in the oven and bake it.
Turn out onto a cooling rack and allow to cool completely.
When you open the tin you will notice that the top is a very solid thick cream. Scoop out all of the solid thick cream on top (you can reserve the rest of it to use in another meal – like a smoothie or a curry).

Put the thick cream into a bowl and mix well using a hand held electric mixer. Move the beaters up and down to try and get as much air into the cream as possible. Add the rum extract and beat until it pretty much resembles thick cream.
Spread the cream over the top of the cake. If you've got some more lychee flesh you can decorate the top with fresh lychee.


Diesen Kuchen hat meine Kollegin Fiona gebacken, er war so lecker, dass ich sie nach dem Rezept gefragt habe. Sie sagte, sie habe es auf  gormandizewithus gefunden. Es ist allerdings eine englische/amerikanische Website, die Angaben sind auch amerikanisch, also in "Tassen", nicht in Milliliter... Hier ist die übersetzte Version:

Zutaten:


1 Tasse Mus einer sehr reifen Banane 
1/2 Tasse Canola Öl (oder anderes gesckmackloses Öl)
1 Tasse Lychee Saft (idealerweise von frischen geschälten Lychees, sonst nehmt die aus der Dose im eigenen Saft)
1/2 Tasse Hafer- oder Sojamilch
1 Tasse Lycheefleisch (abgetropft und klein gehackt)
2 1/2 Tassen Vollkornmehl (gesiebt)
2 TL Backpulver
1/2 TL Soda/Natron
1/2 TL Salz

1 Dose Kokosnussmilch (oder -rahm (über Nacht im Kühlschrank gekühlt, damit sie nachher fest wird))
ev. 1/2 TL Rumextrakt 

Backen:

ca. 1 Stunde (oder bis beim Stäbchentest nichts mehr kleben bleibt) bei 180 Grad Celsius

Backform:

Springform mit Backpapier belegt, Rand gefettet und bemehlt

Zubereitung:


Mischt zuerst das Bananenmus, Öl und die Milch zusammen, dann fügt das Fruchtfleisch bei. Als nächstes wird das Mehl, Backpulver, Natron und Salz untergehoben und alles gut vermengt. 
Nun kommt der Kuchen in den vorgeheizten Ofen und wird gebacken. Nehmt den Kuchen aus dem Ofen und lasst ihn komplett auskühlen. Es wird sich auf dem Kuchen eine dicke, feste Creme/Masse bilden, die ihr wegschaben und für etwas anderes verwenden könnt. 
Nun die gekühlte Kokosnussmilch mit dem Mixer solange mixen, bis genügend Luft daruter gekoome ist und sie schön fluffig ist. Wer mag kann jetzt das Rumaroma beifügen. Jetzt die Creme auf dem Kuchen verteilen und glattstreichen. Wenn noch Lychees übrig sind, diese als Deko auf der Creme verteilen. Fertig!

Trauben-Chia-Gelée Grapes-Chia-Jelly

Dies ist eine gute, sehr gesunde Alternative zu herkömmlichem Pudding oder Gelée... Man kann es natürlich mit anderen Früchten zubereiten, je nachdem was gerade Saison hat oder was man bevorzugt ;)

Zutaten:


Trauben (am besten ohne Kerne)
Chiasamen

Zubereitung:


Trauben waschen und mit dem Pürierstab zu Saft verarbeiten. Es ist okay, wenn noch ein paar Stückchen vorhanden sind. Dann Chiasamen beimischen und das ganze für kurze Zeit in den Kühlschrank stellen. Fertig ist ein leckers, gesundes Dessert...


Grapes-Chia-Jelly


This is a good, very healthy alternative to normal jelly or pudding... Of course one can prepare it with any other fruit, whatever is in season or just what is prefed ;)

Ingredients:


grapes (best the ones without seeds)
chia seeds

How to:


Wash the grapes and blend them until they become a kind of juice. It's okay if it's not too liquid and that there are still some pieces. Now mix  in the chia seeds and put it for a while into the fridge. Ready is a tasty, healthy dessert...

vegane Rohkost-Marmelade

Ich habe schon länger versucht eine vegane Marmelade herzustellen. Zuerst habe ich es mit Agar-Agar ausprobiert, aber da wird es mir immer zu fest. Nun habe ich ein anderes Rezept entdeckt das ganz ohne Gelatine und Zucker auskommt! :) Ausserdem ist es ruck-zuck zubereitet, da es ja Rohkost ist, also nicht gekocht wird...

Zutaten:


200g Früchte oder Beeren (ich nahm Orangen)
100g Datteln
1-2 EL Chiasamen

Zubereitung:


Die Früchte wenn nötig schälen und in Stücke schneiden / die Spalten abtrennen, entsteinen (kommt auf die Frucht an), Datteln entsteinen und eventuell halbieren. Beides in eine Schüssel geben (wer einen Standmixer hat, hat einen Vorteil; es geht einfacher ;) ) und mit dem Pürrierstab zu Mus verarbeiten. Nun die Chiasamen beifügen und mit einem Löffel umrühren. Jetzt nur noch das ganze in ein Glas abfüllen und im Kühlschrank verstauen damit die Chiasamen binden können. Fertig ist die leckere Marmelade. Sie hält allerdings maximal 2 Tage!!



I've tried since a while to make a vegan jam. First I've tried it with agar-agar, but it became a little too hard. Now I found a recipe which works without gelatine and sugar!! :) On top of that it's made really fast since it's also raw...


Ingredients:


200g fruits or berries (I used oranges)
100g dates
1-2 table spoons chia seeds

How to:


If necessary peel the fruits, cut it in pieces and take out the stones (it depends what fruit you're using), take the stones out of the dates and maybe halve them. Now put both into a bowl (if you have a foodprocessor it might be faster) and blend until it becomes a mush. Add the chia seeds and stir it with a spoon. Done! 
Now you just have to fill it into a glass and put it into the frige, so the chia seeds can absorb the liquid and give the jelly kind of texture. 
The jam stays only for 2 days! So don't leave it too long...

Aniskräbeli

Zu Heiligabend ist heute das Rezept des typischen Weihnachtsgebäck dran. Man schmeckt den Anis sehr, wer also Anis nicht mag, wird diese Kekse wahrscheinlich auch nicht mögen... 
Ich habe dieses Mal übrigens eine vegane Variante gemacht und die Eier durch Chiagel ersetzt.
WICHTIG!: Man sollte die Kekse vor dem Backen für 12-24 Stunden bei Raumtemperatur trocknen lassen!


Zutaten:


2 Eier (alt. 2 EL Chiagel)
100-150 g Puderzucker
1 Prise Salz
1-1,5 EL Anis
250 g Mehl


Backform:


Blech mit Backpapier belegt


Backen:


15-25 Min. bei 150 Grad Celsius in der unteren Hälfte des Ofens


Zubereitung:


Eier (in diesem Falle Chiagel), Puderzucker und Salz schaumig rühren. Anis und Mehl dazugeben und alles gut mitteinander vermengen bis ein glatter Teig ensteht. Nun mit nassen Händen kleine fingerdicke Rollen formen, diese 2-3 mal einschneiden und ein wenig biegen. Die Kräbeli auf das Backblech legen und antrocknen lassen, dann backen. En Guete!


Today, on Christmas' eve, I present you a traditional christmas cookie recipe with anason. People who don't like anason probably won't like these ones, since you can taste the anason pretty good... 
Usually they're made with eggs, but I made a vegan version and used chia gel instead.
IMPORTANT!: Before baking you should leave the cookies to dry at room temperature for 12 to 24 hours!


Ingredients:


2 eggs (alt. 2 table spoons of Chia gel)
100-150 g powder sugar
1 dash salt
1-1,5 table spoon anason
250 g flour


baking form:


normal baking sheet covered with baking paper


baking:


15-25 minutes at 150 degrees celsius in the lower part of the oven.


How to:


Mix the eggs (in this case chia gel) with the sugar and the salt in a bowl until it's foamy. Then add the other ingredients and stir it well until it becomes a smooth dough. Now for with wet hands small rolls, cut in 2-3 times and bend them slightly. Put the cookies on to the baking sheet and let them dry then bake them. Enjoy!
